The scientists have discovered that bread releases both hydrogen and methane when it decays. ↑がシンプルな文章で、breadとreleasedの間にwhen ~ bacteriaという補足的なものを入れるわけですが、これを挿入句といいます。 しかし、急にwhen ~と出てきたら読み手は混乱しれしまうため、カンマとカンマで挟むことでどこからどこまでが挿入句なのかを分かりやすくさせています。 また、whenとmixed の間にはit(=bread) is が省略されています。
